Serve this easy family favorite with mashed potatoes and white country gravy.
6 pieces cube steak
garlic powder, to taste
salt and pepper, to taste
all-purpose flour, as needed
6 eggs, well beaten
cooking oil, enough to fill the skillet 1/2-inch deep
Season the cube steak as desired with the garlic powder, salt, and pepper.
Place the flour in a shallow dish. Place the beaten egg in another shallow dish.
Heat the oil to 365 degrees F in a deep skillet.
Dredge the steaks in the flour and shake off any excess. Dip the floured steaks into the egg to coat on all sides, letting any excess drip off. Dredge again in the flour.
Add the steaks to the hot oil and cook for 3 minutes per side or until golden brown. Serve hot with mashed potatoes and well-peppered white gravy.

Only thing missing here is to be sure and drown it in white gravy made from chicken stock with two XL's over easy and a big pile of hash-browns (like the Texas-style recipe). You can start your diet tomorrow. :>)

My first time making chicken fried steak at home. It's pretty good. Restaurant versions sometimes have a more batter like coating and I'm curious how they get that. I'll keep experimenting but this is a good recipe to start with.
