You can't go wrong with a classic prime rib recipe, and this is one of the best we've ever tried. This dish is simple to prepare and cooks to perfection in your oven. The key to success is to start with a good quality cut of beef and cook it low and slow.

1 whole prime rib
Marinade
1 cup bourbon
1/2 cup brown sugar
1/2 cup soy sauce
1/2 cup lemon juice
2 tablespoons Worcestershire sauce
Marinate the beef for 1 or 2 days in the refrigerator. Use a large plastic bag to keep marinade in contact with meat on all sides.
The day you are going to cook it, set the beef out to warm up to room temperature. Drain off the marinade and rub the top (fat side) of the prime rib with spices of your choice. Do not pierce the meat. Put the spice on the fat cap on the top side of the beef.
Put the prime rib into the oven uncovered and let roast for 3 hours at 250 degrees F. Turn the oven off and let the roast remain in the oven for 1 more hour to relax the beef. Carve and enjoy.

It has become a family favorite for special occasions and Christmas dinner. It is very easy to make, and adjustments can be made to the maker's liking. I have a copy of this recipe stored in a bank box for safekeeping. I hope anyone who tries this enjoys it as much as we do.
