Garlic Studded Bone In Prime Rib

ingredients
1 bone-in prime rib
10 cloves garlic, peeled and sliced
1/2 cup oil
1/4 cup rosemary leaves, finely chopped
1/4 cup thyme leaves, finely chopped
1/2 cup Dijon mustard
coarse salt
black pepper
2 pounds shallots
2 pounds carrots
2 large celery
1 bottle red wine
2 quarts beef broth
directions
Preheat oven to 300 degrees F.
Insert garlic slices into slits in prime rib. Mix oil, rosemary, thyme, mustard, salt and pepper and rub all over prime rib. Roughly chop veggies and place in large roasting pan to make a "rack".
Place rib on veggies and roast 12 to 15 minutes per pound to internal temperature of 115 degrees for medium rare. Remove meat from pan and let rest 15 to 20 minutes.
Add wine to roasting pan and cook over medium heat until almost dry. Add beef broth and reduce by half. Adjust seasoning and serve over prime rib.
