Flounder with Shrimp Sauce

Crispy pan-fried flounder fillets are topped with a tangy shrimp-filled sauce. It's an elegant looking dish that is simple to make and tastes amazing. If you can't get small salad-style shrimp, you can chop up larger cooked shrimp to use in this recipe.

Shrimp Sauce

6 ounces cooked small shrimp (or use larger shrimp, chopped)
1 cup mayonnaise
1 tablespoon chili sauce
1/8 teaspoon curry powder
1 tablespoon sherry, optional

Flounder

3 tablespoons all-purpose flour
1 egg, beaten
4 tablespoons breadcrumbs
3 tablespoons lemon juice
8 flounder fillets
salt and black pepper, as desired
6 tablespoons oil
fresh dill or parsley for garnish
lemon wedges for garnish

directions

Combine the shrimp, mayonnaise, chili sauce, curry powder, and sherry in a bowl and mix well. Cover the bowl and refrigerate until ready to assemble the meal.

Place the flour in a shallow dish. Place the beaten egg in another dish, and the bread crumbs in another.

Drizzle the lemon juice over both sides of the flounder. Season the fish with salt and pepper, as desired. Dredge the fish in the flour and shake off any excess.

Dip the floured fish into the egg, coating it on both sides and letting any excess drip off. Next, press it into the breadcrumbs so they adhere on both sides. Place the fish on a sheet of waxed paper and set aside.

Take the shrimp mixture out of the refrigerator.

Heat the oil in a heavy skillet over medium heat. Add the fish fillets, in batches as needed, and cook for 3 minutes per side or until golden brown and cooked through.

Serve the fish garnished with fresh dill, lemon wedges, and topped with the shrimp sauce.

    This was terrific! And I don't usually eat much fish. The breading was mildly spicy, and the sauce had a flavor that I don't think I've had before. You can skip the lemon wedge squeeze. Why ruin a good thing?
