ingredients
6 corn tortillas
8 ounces Monterey jack cheese, shredded
8 ounces refried beans
1/2 pound bulk hot Italian sausage
2 tablespoons diced green chiles
2 egg
2 cups half and half
1/2 teaspoon salt
directions
Brown sausage in a skillet. Stir to crumble. Drain well.
Line a 9-inch pie pan with the tortillas, leaving a 1/2 inch lip hanging over the edges. Sprinkle half of the cheese on top of the tortillas.
In layers, place the beans, crumbled sausage, and the chilies. Beat the eggs well in a medium bowl. Add the half and half and salt. Stir well to blend. Pour into the pie pan. Top with remaining cheese.
Bake at 325 degrees F for 35 minutes until set in the middle. Serve warm.
