1/2 cup oil
1/2 cup sugar
1/2 cup brown sugar
2 beaten eggs
1 cup canned pumpkin
1 1/2 cup sifted flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon soda
1 cup chopped walnuts
Blend together the oil and sugars. Stir in beaten eggs and pumpkin. Sift dry ingredients together and then stir in nuts. Combine egg mixture with dry mixture.
Pour batter into greased and floured 2 lb coffee can. Place can in crockpot. Cover top of can with 6-8 paper towels. Cover; cook on high for 2 1/2 - 3 hours.

First time making something like this in my crock pot so I'm not sure if it is my crock pot or the recipe but it took longer than 3 hours. More like 5. But it did get cooked in the middle finally and was good. Just a basic recipe for pumpkin bread really but it was very moist which I liked.
