Delicious Pumpkin Bread

ingredients
3 cups sugar
1 cup salad oil
4 eggs, beaten
1 can (16 ounce size) pumpkin
3 1/2 cups flour
1 teaspoon baking powder
2 teaspoons salt
2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
2/3 cup water
1 cup chopped pecans, optional
directions
Combine sugar, oil, and eggs; beat until light and fluffy. Stir in pumpkin.
Combine dry ingredients, and stir into pumpkin mixture. Add water and nuts, mixing well.
Spoon batter into 2 well-greased 9x4 loaf pans. Bake at 350 degrees F for 65-75 minutes.

This recipe was so simple and easily and not complicated at all. There were not many ingrediants which makes it all the more great. It tastes delicious. Works will as mini muffins

I got the urge last night to make something festive for the season. I found this version of pumpkin bread which seemed easy to make and had ingredients I liked. Not only was it easy, it came out absolutely delicious. Co-workers are chowing now as I type raving!! I did make a few changes to the recipe if anyone is interested. I use wheat flour for half the flour and brown sugar for half the sugar. I also like walnuts better than pecans. Enjoy!!

It was the first time I have baked and this recipe turned out perfect. I have now made eight batches, I can't make them fast enough all my friends want them. They turned out very moist and really delicious. I put walnuts in mine because I am not a fan of pecans. Great recipe, thanks.

This is a really quick and easy recipe and turned out great. I liked the fact that it didn't use a lot of sugar. I substituted Splenda for the sugar, and used whole wheat pastry flour as it did not specify the type of flour. Very good!
