Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

Rich and creamy, this simple rice pudding made with instant rice and vanilla pudding mix can be served hot or cold.
4 cups milk
1 egg
1 package (small size) cook and serve vanilla pudding mix
1 cup raw instant rice
1/4 cup raisins
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Whisk together the milk and egg in a saucepan (off the heat). Stir in the pudding mix. Bring the mixture to a boil over medium heat, stirring constantly. Stir in the rice and raisins and cook, stirring occasionally, until it comes back to a boil.
Remove the pan from the heat and let cool for 5 minutes, stirring twice during the cooling time.
Divide the rice pudding between individual serving dishes. Sprinkle with the cinnamon and nutmeg. Serve warm. Or, chill the rice pudding and serve cold.
For a twist, add coconut milk or almond extract.
Try different spices, such as cardamom or allspice, for unique flavors.
Serve warm with a dollop of whipped cream.
Top with fresh berries or sliced bananas before serving.
Chill the pudding overnight for a firmer texture if serving cold.
Use a heavy-bottomed saucepan to prevent scorching.
Add a touch of maple syrup or honey for natural sweetness.
Instant rice has been precooked and dehydrated, allowing it to cook more quickly. It typically cooks in just a few minutes, whereas regular rice requires more time to absorb water.
This recipe really is formulated to use instant rice for convenience. We have other rice pudding recipes that use regular rice.
If the pudding is too thick, you can stir in a little more milk (or even water) to reach your desired consistency. Heat gently while stirring to incorporate the additional liquid.
You can omit the raisins if you prefer a different texture or flavor. You could also replace them with dried cranberries, chopped nuts, or fresh fruit.
You can boost the flavor by adding a splash of vanilla extract, a pinch of salt, or by infusing the milk with a cinnamon stick during heating before adding other ingredients.
You can prepare rice pudding in advance and store it in the refrigerator. It will keep well for up to 3-4 days. Just cover it tightly to prevent it from drying out.
Rice pudding can be frozen, but the texture may change when thawed, becoming a bit grainy. Store it in airtight containers, leaving space for expansion, and consume it within 2-3 months.
Sugar-free pudding mix will work just fine but you need the cook and serve kind of pudding mix, not instant. Instant pudding doesn't require cooking and won't work with this recipe.
