1 cup white rice
8 cups milk
1 tablespoon grated lime rind
1 cinnamon stick
3/4 cup sugar
Combine the rice, grated lime rind, and half the milk in a saucepan over medium-low heat until the rice is tender and the liquid has been absorbed. Do not stir the rice too frequently.
Add the remaining milk, cinnamon stick, and sugar. Mix well. Continue to cook over medium-low heat, stirring occasionally, until the rice mixture has thickened.
Turn off the heat and let the rice stand in the saucepan until it cools some. Serve warm or chilled.
