Fresh Gooseberry Pie Recipe

Ingredients:
1 package Almond Pastry for a 2-crust pie*
3 cups fresh gooseberries
1 1/2 cup sugar
3 tablespoons quick-cooking tapioca
1/8 teaspoon salt
2 tablespoons butter or margarine
Directions:
Crush 3/4 cup gooseberries and add to sugar, tapioca and salt. Stir in remaining berries. Cook and stir until mixture thickens. Turn into pastry-lined 9-inch pie pan. Dot with butter. Adjust top crust and flute edges; cut vents. Brush with milk. Bake at 425 degrees F for 35-45 minutes or until crust is golden brown. Serve slightly warm.
*Almond Pastry: Before adding water to blended flour and shortening when you are making the pastry, add 1 tsp. almond extract. Also good for peach or cherry pie.
