Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Fresh Gooseberry Pie

ingredients
1 package almond pastry for a 2-crust pie*
3 cups fresh gooseberries or green grapes
1 1/2 cup sugar
3 tablespoons quick-cooking tapioca
1/8 teaspoon salt
2 tablespoons butter or margarine
directions
Crush 3/4 cup gooseberries (or grapes) and add to sugar, tapioca and salt. Stir in remaining berries. Cook and stir until mixture thickens.
Turn into pastry-lined 9-inch pie pan. Dot with butter. Adjust top crust and flute edges; cut vents. Brush with milk.
Bake at 425 degrees F for 35-45 minutes or until crust is golden brown. Serve slightly warm.
* Almond Pastry: Before adding water to blended flour and shortening when you are making the pastry, add 1 tsp. almond extract. Also good for peach or cherry pie.

I made this tonight and just wanted to shout out the warning that you should use INSTANT tapioca. I used regular and it did not soften up, making the pie pretty much inedible in terms of texture. However, the flavor was great, hence the 4 stars and the warning.
