1 1/2 cup milk
3 eggs, lightly beaten
3 tablespoons margarine, melted
2/3 cup rolled oats
1 1/3 cup dark brown sugar
2/3 cup flaked coconut
1 pie shell, unbaked (9 or 10 inch)
Preheat oven to 425 degrees F.
Combine milk, eggs, butter, oats, sugar and coconut in a large bowl. Mix thoroughly with a wire whisk.
Pour into pie shell and sprinkle with additional coconut. Bake for 10 minutes.
Reduce heat to 350 degrees F and bake for an additional 30 minutes or until a knife inserted in the center comes out clean.

Unlike other recipes for oatmeal pie, this one doesn't use white sugar nor corn syrup (GMO)... it is therefore much more healthy. I would suggest to use butter instead of margarine, as it is more healthy. I would also suggest to make a pie shell out of oatmeal(look up recipe) so that you could take this to the next level.

I love this recipe! I had gotten my original copy of it from Parent's magazine years ago. I used to make it all the time when my kids were little, I am making it for Thanksgiving this year! I am happy to see the recipe online.

I love this recipe. I tried oatmeal pie at a fair and was never able to find it again. Until I looked it up here. This recipe is so delicious and unique. It's very easy to make and my family loves it. Thank you. I'm really glad I found this recipe! I'm bringing it over to a friends house tonight. It'll be their first time trying oatmeal pie-they're excited to see if it's as good as I say.

The first time I ever had oatmeal pie was this past weekend in a historical Pennsylvania Tavern. I had to find a recipe for it! This recipe is great! I think just like the one at the tavern where George Washington visited! It has a great old fashioned texture and delicious flavor. An easy and different recipe to try.
