This microwave butternut squash and apple soup is a fast, healthy, and delicious way to enjoy fall flavors. Butternut squash is full of vitamins and fiber, while apples add sweetness and a bit of tartness to the soup.
1 medium butternut squash, pared, seeded and cut into 1-inch cubes
2 medium Granny Smith or McIntosh apples, pared, cored and cut into 1-inch cubes
4 scallions, white part only, cut into 1-inch pieces (reserve green for garnish, if desired)
3/4 cup unsweetened apple juice
1 tablespoon honey
1 tablespoon lemon juice
1 teaspoon salt, or to taste
1 teaspoon ground cinnamon
sour cream for garnish, optional
chopped pecans for garnish, optional
In 3-quart casserole, place squash, apples, scallions, apple juice, honey, salt, lemon juice and cinnamon. Microwave on High 6-10 minutes until squash, apples and onion are very soft.
Carefully transfer hot mixture to blender container, or food processor. Process in batches, if necessary, until smooth.
To serve, ladle soup into bowls and garnish, if desired, with sour cream, pecans and scallions strips.
