Ingredients:
1 (9 Inch) Chocolate Wafer Pie Crust
1/2 cup Cold Water
1 tablespoon Unflavored Gelatin
1/2 cup Boiling Water
3 Sq Semisweet Chocolate
8 ounces Cream Cheese -- softened
1 cup Sugar
1 1/2 teaspoon Vanilla
3/4 teaspoon Peppermint Extract
14 1/2 ounces Evaporated Milk
3 tablespoons Lemon Juice

Directions:

Chill evaporated milk in freezer tray until ice forms around edges. Sprinkle gelatin evenly over cold water Let stand 5 minutes. Add boiling water and stir to dissolve. Set aside to cool. Melt chocolate over hot water.

Cream together: cream cheese, sugar, vanilla and peppermint. Blend in melted chocolate. Add gelatin gradually, blending well. Chill in refrigerator until mixture begins to gel. Whip evaporated milk until high in volume. Add 3 T lemon juice. Add chocolate mixture to whipped milk and pour into crust. Freeze at least 3 hours.
