1-2 hrs
ingredients
Crust
1 1/4 cup crumbs (graham crackers, chocolate wafers, etc.)
2 tablespoons sugar (if wafers are sweet, reduce sugar)
2 ounces melted butter
Cake
6 ounces bittersweet chocolate
1/4 cup rum or Amaretto
3/4 cup sugar
1/2 cup sour cream
1 pound cream cheese
1 tablespoon vanilla extract
4 extra large eggs
directions
For Crust: Blend crumbs with other ingredients and press into the bottom of a greased, spring-form pan and refrigerate.
For Cake: Melt chocolate and liquor (1 min on high in Microwave); stir until smooth. Put next five ingredients into a blender and blend on the slowest speed. Set aside 10 ounces of this mixture. Add chocolate liquor mixture to the cheese in the blender and mix.
Put chocolate/cheese mixture into the pan with the crust. Then put vanilla mixture in, in four even blobs. Use a knife to swirl the two together.
Bake 50 minutes at 325 degrees F.

They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
