Cake

1 graham cracker pie crust (9 inch size)
2 pounds cream cheese, softened
1 cup sugar
1/2 cup heavy cream
1 cup sour cream
5 jumbo eggs, room temperature
3 teaspoons lemon juice, fresh
1/4 cup cornstarch
1 1/2 cup bananas, very ripe, mashed

Topping

2 tablespoons sugar
1 tablespoon cornstarch
1 can (16 ounce size) pineapple chunks in syrup, crushed
melted milk chocolate
mashed strawberries
whipped cream
maraschino cherries

directions

For Crust Mixture: Preheat oven to 325 degrees F. Place pan of water in oven.

Beat cream cheese until fluffy on high speed. Add sugar and beat. On low, beat in eggs one at a time.

Stir in cream, sour cream, lemon juice and cornstarch. Stir in banana.

Pour into crust. Bake for 1 hour until edges are firm and middle is a bit soft. Remove from oven. Let cool for 10 minutes. Let cool completely.

For Topping: Mix sugar and cornstarch well in saucepan. Add pineapple and cook until boiling and thickened slightly. Cool completely.

To Assemble: Pour pineapple over top. Drizzle on melted chocolate. Add strawberries. Pipe on whipped cream and top with cherries.

    There is something wrong with the size of the pan. I took it to read that I was to use a 9" graham cracker pie crust (like the store bought) There is too much batter! It might be a 9" or 10" springform pan that would be more like it, for the amount of ingredients.
