Hard to find a more simplistic, classic potato soup than this. Boiled potatoes and onions with milk, butter, and salt are all it takes to make this down-home bowl to warm any chilly night.
3 cups peeled and diced raw potatoes
1/2 cup finely chopped onions
1 cup boiling water
1 1/2 teaspoon salt
3 cups milk
2 tablespoons butter
Combine the potatoes, onions, water, and salt in a saucepan over medium heat. Bring to a boil then cook until the potatoes are tender (10-15 minutes).
When the potatoes are soft, add the milk and butter. Bring to a simmer (do not let it boil) and cook until heated through.
Serve the potato soup hot.

I've made this soup a few times and I love it, it's simple, and so good. Made some for a friend after having surgery and she ate it for breakfast she loved it so much

Do you drain the potatoes before you add the milk? Our leave the liquid for flavor? I've never made this before

I've tried every potato soup recipe out there but always this one is the family favorite! And no special trips to the store required! Milk, butter, onion & potatoes...what could be easier?! My grandmother made hers like this, always thickening it with instant potato flakes.

when I was a child my father was a tenant farmer and we pretty much ate what we could produce in a truck patch, and store throughout the year. I remember having soup made like this so often through those winter months. Thanks for the reminder.
