Oatmeal Cranberry Muffins

ingredients
1 1/2 cup all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
1/2 cup walnuts, finely chopped
1/2 cup dried cranberries, dried pitted cherries or raisins
3/4 cup old fashioned oats
3 tablespoons butter, softened
3/4 cup firmly packed light brown sugar
3/4 cup milk
1 egg
directions
Preheat oven to 350 degrees F. Grease muffin pan cups or loaf pan (8 1/2 x 4 1/2 inch).
Whisk together flour, baking powder and salt in large bowl. Toss nuts and cranberries with 1 teaspoon of flour mixture in small bowl. Set aside.
Stir oats into remaining flour mixture. Beat together butter, sugar, milk and egg in a bowl until blended. Add to flour mixture, stirring just until evenly moistened. Fold in nut-cranberry mixture. Turn into greased muffin pan cups or loaf pan.
Bake in preheated oven for 20 minutes for muffins, or 50 minutes for loaf, or until wooden pick inserted comes out clean. Cool muffins on wire rack for 5 minutes. Cool loaf for 10 minutes.
