Date Nut Chocolate Fudge

ingredients

1 package (16 ounce size) pitted dates
5 ounces unsweetened baking chocolate, melted
2 tablespoons evaporated milk
1/4 cup pecans (chopped or whole)
2 tablespoons unsweetened flaked coconut (optional)

directions

Chop dates in food processor until paste-like consistency. Place date paste in bowl, add remaining three ingredients, and stir well.

Press into greased or waxed paper lined 8" x 8" pan. Chill. Cut. Enjoy.

cook's notes

If food processor is not available, dates can be smashed into a paste with a meat mallet or mortar/pestle.

After performing many searches for a no-sugar fudge recipe that was not laden with artificial sweeteners, I decided to invent my own. This is a lightly sweet, dark chocolate fudge.
