Cilantro Black Bean and Rice Salad - CDKitchen.com

ingredients

1/2 cup uncooked white rice
1 1/3 cup water
3/4 cup canned black beans, rinsed and drained
1/4 cup fresh cilantro leaves (pinch leaves off stems)
1/4 cup lime juice
1/4 teaspoon salt and black pepper, to taste
1/8 teaspoon black pepper
2 tablespoons extra virgin olive oil

directions

Cook rice according to package directions, using the specified water and omitting any salt or fats. Cool by placing hot rice on a baking sheet or sheet of foil in a thin layer, about 10 minutes.

When completely cooled, place rice in a medium mixing bowl with remaining ingredients, and toss gently, yet thoroughly. Serve immediately.
