ingredients

4 cans (14 ounce size) black beans, drained and rinsed
2 tablespoons fresh-squeezed lemon juice (use more or less, to your taste)
1 tablespoon fresh mint, minced
1 cup crumbled feta cheese

Optional

2 tablespoons olive oil

directions

Mix all ingredients together in large glass bowl. Cover and chill for at least 3 hours prior to serving.
