Italian Beef Stew

2 pounds chuck stewing beef cut in 1"cubes
10 ounces frozen stew vegetables
1 can (15 ounce size) Italian style diced tomatoes
1/2 cup red wine, optional
1 medium onion, coarsely chopped
1 envelope (1.5 ounce size) mushroom or onion soup mix
3 stalks celery, coarsely chopped
1/2 teaspoon Italian seasoning
1/4 teaspoon thyme
3 medium sweet potatoes or yams cut into cubes
Combine all the ingredients except sweet potatoes in a 5 quart crock pot insert and cover. Cook on LOW for 8-10 hours on HIGH 5-6 hours. Add sweet potatoes into the crock pot the last 2 hours of cooking time.
This recipe is unusual because it uses sweet potatoes instead of white potatoes. You can use yams as well.
