ingredients

1 pound beef stew meat
1 cup red wine
1 onion, sliced
1 can (8 ounce size) diced tomatoes
1 green bell pepper, diced
1/4 cup raisins
1/4 cup dried apricots
1 cup water
1/2 cup mushrooms, sliced
1/4 cup ripe olives, sliced
1 teaspoon tarragon
1 teaspoon thyme
1 clove garlic, minced
1 bay leaf

directions

Brown beef, then add all ingredients but mushrooms and olives. Cook for 1 hour.

Add mushrooms and olives and cook for another half hour. Thicken slightly. Serve over rice.
