Beef And Cactus Stew

ingredients
2 pounds beef steak
2 tablespoons olive oil
1 medium yellow onion
4 cloves garlic
1 cup canned cactus pieces
4 fresh jalapeno chilies
2 chipotle chilies
4 green tomatoes
2 medium red tomatoes
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
directions
Cut the beef into 1-inch pieces. Place in a large frying pan with the olive oil. Heat to medium temperature. Cook beef until brown on all sides.
Remove the skin from the onion and cut into 1-inch pieces. Remove the skin from the garlic and mince.
Drain off the water from the cactus and cut into 1-inch pieces. Remove the stems and seeds from the chilies and cut into 1/4-inch pieces. Cut the green and red tomatoes into 1-inch pieces.
Add all the ingredients to the beef and reduce the heat to low. Cover and cook for 1 hour, stirring periodically.
