Artichoke and Salmon

ingredients
1 package (9 ounce size) frozen artichoke hearts, cooked
1 can (16 ounce size) red salmon
1 lemon, very thinly sliced
2 tablespoons capers
1 cup sour cream
buttered bread crumbs
directions
Preheat oven to 350 degrees F.
Place artichoke hearts in 1-qt. casserole dish. Layer salmon, lemon slices, capers and sour cream. Top with buttered bread crumbs.
Bake for 30 minutes or until done and bread crumbs are browned.

Excellent, my wife and I are on a diabetic diet and this fit the bill. We used canned artichokes and it worked just fine. We also drained the salmon.
