Saint Patrick's Mint Chocolate Chip Muffins

ingredients
2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon salt
2 eggs
3/4 cup milk
1/4 cup oil
4 tablespoons butter, melted
1 teaspoon lemon juice
1/2 teaspoon corn syrup
1 teaspoon peppermint extract
1 cup chocolate chips
4 drops green food coloring
directions
Preheat the oven to 350 degrees F.
Sift together the dry ingredients, and make a well in the center. Add the eggs, milk, oil, melted butter, lemon juice, corn syrup, and green food coloring and mix by hand. Fold in the chocolate chips.
Spoon batter into muffin pan and bake for 25 to 30 minutes.
