Boursin Stuffed Mushrooms

ingredients
40 medium mushrooms
1 cup boursin cheese
melted butter
directions
Wash mushrooms and remove stems. Fill mushrooms with cheese. Brush the mushroom caps with melted butter.
Bake on a cookie sheet at 350 degrees F for 30 minutes.

I used this recipe as a base idea. I sauteed red and green bell pepper (finely chopped) and onion and let it cool then mixed with the boursin. I added a little roasted garlic to the butter. No one could eat just one!

This is a quick and elegant appetizer that I have made several times with many compliments. If you want to make a real presentation just add little springs of parsley just before serving. Easy on the pocketbook too!
