Quick and Easy Cheesecake

Such an easy cheesecake! Eggs, sugar, and vanilla with cream cheese are all you need to create an elegant, delicious dessert. And the topping options are endless.

2 packages (8 ounce size) cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla extract
2 eggs
1 graham cracker pie crust

directions

Preheat the oven to 350 degrees F.

Combine the cream cheese, sugar, vanilla, and eggs in a mixing bowl. Beat on medium-high speed with an electric mixer until light, fluffy, and well mixed.

Pour the cheesecake filling into the graham cracker crust. Place the cheesecake in the oven and bake at 350 degrees F for 40 minutes.

Remove the cheesecake from the oven and let cool completely. When cool, place the cheesecake in the refrigerator for a minimum of 3 hours before slicing and serving.

Top with any desired toppings such as fruit or flavored syrups.

    Love this recipe, made it a few times. Quick and easy. I separate my egg whites then beat them until they are fluffy, then I after all the ingredients are well mixed I add the fluffy egg whites, makes the cheesecake a little "fluffier".

    made a long time ago and lost recipe...glad to find it again as it is delicious. I mix a little sour cream and sugar together and let it sit for a few minutes for the sugar to melt and then spread on the top like frosting....we love it.

    Mine was delicious even though the batter was a bit lumpy. I was afraid to overbeat it. An experienced baker advised me to whip the cream cheese first before adding in the other ingredients. But as I mentioned, it still turned out great! Never realized that cheesecakes were this easy to make! Will never buy one again!

    I've made this several times now and it's excellent! I did follow a couple other suggestions by adding in one container of either strawberry or blueberry yogurt and 1/4 cu of lemon juice. I've also doubled the recipe and put it in a rectangular aluminum pan for larger gatherings and it worked out great. If you do the aforementioned doubling, top it with blueberries and strawberries in the form of an American flag for the 4th! It WILL be a hit!!!

    Very nice recipe, so I thought to rate. I added a little lemon flavour and also didn't have enough cream cheese, so I halved the recipe. Creamy and lovely, however next time just for my own taste I think I will use some mixed nuts somewhere. I can see this tasting very well with chocolate or caramel sauce. My two year old loved it. Will use again! :)
