ingredients

3 cups plain flour
2 teaspoons cinnamon
2 teaspoons soda
1 teaspoon salt
1 cup oil
4 eggs
1 1/2 cup honey
3 cups grated carrots
3 cups chopped pecans

CREAM CHEESE ICING

8 ounces cream cheese, softened
1/3 cup honey
1 teaspoon vanilla extract

directions

Sift all dry ingredients together. Add oil, honey and eggs. Mix well. Fold in carrots and nuts.

Bake at 325 degrees F for 30 minutes or more in two layer pans. Baking time will increase if you use a bundt pan.

CREAM CHEESE ICING: Blend until smooth. Ice cake while warm.
