Who says baby food is just for babies? Grab your apron and prepare to whip up a delightfully moist cake that might just become your go-to for dessert.
3 eggs
1 teaspoon baking powder
1 cup oil
2 teaspoons cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cup sugar
2 cups flour
2 jars (6 ounce size) baby food carrots
1 1/2 teaspoon vanilla extract
Frosting
2 tablespoons margarine
3 ounces cream cheese
2 cups powdered sugar
2 teaspoons milk
Mix eggs, sugar and oil together. Add dry ingredients and vanilla. Fold in carrots.
Bake at 350 degrees F in a greased and floured 9 x 13 pan for 40 to 45 minutes.
For Frosting: Cream margarine and cream cheese. Add powdered sugar and milk; mix until smooth and creamy. Add more milk for thinner frosting.

I made this recipe years ago but lost the recipe. I was thrilled to find it. This is the best carrot cake. I do like to add chopped nuts to the batter. Thanks for posting it

This is the best carrot cake I have tasted and very moist, very easy and quick to make. Ive been using it to give to my friends and they are very pleased with it. Thank you for this great cake.
