ingredients

2 cups sugar
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 cup vegetable oil
4 eggs, at room temperature
3 cups freshly grated raw carrots
lemon flavored frosting

directions

Combine the sugar, flour, baking soda and salt.

Add oil; mix well. Add eggs, one at a time, beating well after each addition. Stir in carrots. Pour batter into greased and wax paper lined 13x9x1 jelly roll pan. Bake at 350 degrees F for 20 to 30 minutes.

Do not open oven for the first 20 to 30 minutes of baking time. Loosen edges of cake in jelly roll pan as soon as it is removed from the oven. Reverse pan onto a clean towel that has been dusted with confectioners' sugar. Roll up in towel and place on rack to cool. When thoroughly cool, unroll cake and spread with frosting. Roll cake up jelly-roll style.

Top with lemon frosting.
