Carrot Cake

1 package spice cake mix
1/4 cup oil
1 cup grated carrot
1 teaspoon ground cinnamon
3 eggs
1 1/3 cup water

Secret Cream Cheese Frosting

1 package (8 ounce size) cream cheese, at room temperature
1 teaspoon instant coffee powder
3 teaspoons water
1 package (1 pound size) confectioners' sugar
1 cup toasted chopped pecans

directions

Preheat oven to 350 degrees F. Grease and flour a 13x9 cake pan.

Combine the spice cake mix, oil, grated carrot, cinnamon, eggs, and water in a bowl and stir until the ingredients are mixed.

Pour the batter into the prepared pan and bake at 350 degrees F for 35 minutes. Let cool completely in the pan before frosting.

For the frosting, place the cream cheese in a mixing bowl. Beat on medium speed with an electric mixer until fluffy. Add the coffee powder and water and mix for 1 minute. With the mixer running, add the confectioner's sugar slowly and beat until the frosting is fluffy. Add more water if the frosting is too thick. Stir in the pecans by hand.

Spread the cooled cake with the frosting. Store cake in an airtight container.
