3 cups cake flour
1 3/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
2/3 cup butter, softened
1/3 cup maraschino cherry juice
2/3 cup milk
16 maraschino cherries, very roughly chopped
5 egg whites
1/2 cup chopped pecans

directions

Sift together flour, baking powder and salt.

Blend together sugar and butter. Add cherry juice, and milk. Stir, then add dry ingredients. Beat 2 minutes and then add egg whites. Beat 2 minutes more. Fold in cherries and nuts.

Pour into prepared 9-inch round cake pans and bake at 350 degrees F for 30 to 35 minutes, or until done. Cool and frost with a fluffy white frosting or your favorite frosting. Decorate with additional cherries.

    Recipe turned out perfect! Not dry at all and I didn't modify a thing. I decorated it with the cherries and some green fondant leaves I made for a xmas-y look. Everyone loved it!

    I've made this cake several times for my husband's birthday and it ALWAYS comes out dry. Very disappointing since it's the kind of cake he always had as a kid, and I had to search for a recipe since I hate mixes. I've given up on this one and am probably going to make my usual white cake and just add the cherries and cherry juice.....

    • A dry cake is usually one of two things. Flour, or over baking. It could be the brand of flour used (I've noticed differences between brands of cake flour). You could try a different brand, or try reducing the amount of flour by a tablespoon. Or, reduce the oven heat a little. It's possible that your oven cooks differently than the one used when developing this recipe.
