Zucchini Pina Colada Cake

ingredients
3 cups zucchini
2 1/2 cups sugar
1 1/2 cup oil
4 eggs
1 cup crushed pineapple (drained)
1 teaspoon rum flavoring
1 teaspoon coconut flavoring
1 teaspoon vanilla extract
4 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoon salt
1/2 cup chopped walnuts
directions
Mix zucchini, sugar, oil, and eggs. Then add crushed pineapple, rum flavoring, coconut flavoring and vanilla. Mix well.
Add flour, baking powder, baking soda and salt. Mix well. Then add walnuts.
Put in a greased 13" x 9" or larger glass baking pan. Bake in a preheated oven (middle rack) at 350 degrees F for 45-55 minutes or until toothpick stuck into the middle comes out clean.
Cool and frost. Tastes great with a cream cheese frosting.
