Unwinding at home can sure feel luxurious with a slice of beach cake in hand. By the time you finish making it, you might find yourself dreaming of sandy shores and sunshine.
Preheat the oven to 350 degrees F. Grease a 9x13 baking dish.
Combine the cake mix, pecans, melted butter, and egg in a bowl. Mix well and then pat the mixture into the bottom of the prepared baking dish.
In another bowl, combine the confectioners sugar, eggs, and cream cheese. Beat on medium speed with an electric mixer until smooth. Pour the cream cheese mixture over the cake layer in the baking dish.
Place the baking dish in the oven and bake at 350 degrees F for 35-45 minutes.
Remove the dish from the oven and let the cake cool then chill it before serving. Store the cake, covered, in the refrigerator.
This is a wonderful moist cake. You can't tell it comes from a mix. The cream cheese layer sinks in and makes it so rich and good.
