ingredients
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon, optional
2 cups sugar
3 eggs, beaten
1 cup oil
1 package (10 ounce size) frozen strawberries, thawed
confectioners' sugar for dusting
directions
Combine flour, soda, salt, cinnamon if using, and sugar; mix together well.
In another bowl, combine eggs, oil and thawed sliced strawberries. Add to the dry ingredients and mix well. Pour into 2 greased 9" x 5" loaf pans.
Bake in preheated 350 degrees F oven for about 1 hour. Leave in pan to cool. When almost cool, turn onto wire rack and dust tops with confectioners' sugar.
Slice and serve warm or at room temperature.
