ingredients

3 pounds beef stew meat
1/4 cup water
salt and pepper to taste
2 cans (15 ounce size) diced tomatoes
3 cloves garlic minced
1 cup chopped onion
3 tablespoons flour
1/2 teaspoon cumin
1/2 teaspoon oregano
1 teaspoon chili powder
1 diced bell pepper

directions

Place stew meat, 1/4 cup water, salt and pepper in crockpot. Turn heat to high and let simmer for 1 1/2 hours. Drain juice from the tomatoes into measuring cup. Add tomatoes, garlic and onions to crock pot.

STIR; let simmer on high for 30 minutes. Add cumin, oregeno, and chili powder to crock pot and stir. Blend the tomato juice and enough water to equal 1 1/2 cups liquid. Add flour to the liquid and stir into meat mixture.

Let cook on LOW for 3-4 hours until sauce is thick. Serve with warm flour tortillas.

    Great recipe..but anybody else notice it never says when to add the bell pepper?

    • You can probably safely add it along with the other vegetables.

    Excellent recipe. Three out of four family members loved it. Our picky youngest eater didn't, but she won't eat anything with spices. We will likely make this several times per month. It tasted a lot like the Carne Guisada from a local restaurant and it was much less expensive to make it at home.
