Banana muffins are a great way to start your day. They are fat-free, and they taste great. This recipe can also be made into banana bread by using a loaf pan.
1 cup brown sugar
2 eggs or equivalent egg substitute
1/2 cup unsweetened applesauce
2 1/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon or ground nutmeg, or to taste
3 medium peeled and mashed bananas
Preheat the oven to 350 degrees F. Grease a muffin pan or loaf pan.
Combine the brown sugar, eggs, and applesauce in a large bowl. Mix well.
Combine the flour, baking powder, salt, and cinnamon (or nutmeg) in another bowl. Stir the flour mixture into the egg mixture until just combined. Add the bananas and mix gently. The batter will be a little lumpy. Do not overmix the batter.
Fill the muffin cups 2/3rds full (or pour into the loaf pan). Place the pan in the oven and bake at 350 degrees F for 20 minutes or until set. Bake for 30-40 minutes for a loaf pan.
Remove the pan from the oven and let the muffins cool for 3 minutes in the pan then remove from the pan and let cool on a wire rack. If using a loaf pan, let the bread cool in the pan.
Store the cooled muffins in an airtight container.
Muffin Pan or Loaf Pan: Required to bake the banana muffins or banana bread.
Bowls: For mixing the wet and dry ingredients separately (then together).
Measuring Cups and Spoons: For accurately measuring ingredients like brown sugar, flour, baking powder, salt, etc.
Whisk or Spoon: To blend the wet and dry ingredients together.
Cooling Rack (optional): For cooling the muffins after baking to prevent them from getting soggy on the bottom.
Airtight Container: For storing the muffins once they are cooled completely.

Extremely flavorful. Easy to make. Really satisfies the craving for sweets. My husband loved them. They are a little heavy but it doesn't deter from the taste.
