1 1/2 cup 100% bran cereal
1 1/2 cup applesauce
1 egg, slightly beaten
1/4 cup margarine, melted
1/2 cup light brown sugar, packed
1 1/2 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 cup raisins, optional
Applesauce Glaze
1/2 cup powdered sugar
1 tablespoon applesauce
Preheat oven to 400 degrees F; grease muffin pans.
In a large bowl, mix bran, applesauce, egg, margarine and brown sugar; let stand for 5 minutes. In a separate bowl, blend flour, baking powder and cinnamon; stir in bran mixture just until blended, batter will be lumpy. Stir in raisins. Spoon batter into muffin cups and bake for 15 to 18 minutes, or until a toothpick inserted in the center comes out clean. Remove from pans; cool slightly. To prepare glaze, blend powdered sugar and applesauce until smooth; drizzle over muffins.

Excellent & easy! but, I changed a few things on this one "just to see" if it would work and for health reasons. I used raisin bran cereal, I also used organic unsweetened applesauce, I used butter, 1/2 Organic coconut sugar, u can use gluten free flours, i used a bit of tangerine zest and 1 1/2 tsp of cinnamon and no glaze.....Outcome? EXCELLENT!!! will def make more and always change it up, its fun that way!!!

Super easy and quick, I make without the glaze and substitute whatever I have on hand (cranberries, blueberries, etc.) for raisins. Even my picky toddler eats them!

Delicious and moist! Great way to eat bran. I replaced raisin by blueberries. Kids and husband loved them. I will make them often!

I make these for my wife. She eats them for the fiber, enjoys them for the taste. One change, however, I make them with a full cup of blueberries, frozen or fresh. They are also great with cranberries, also a full cup. I must have made these 20 or more time to date and I don't think there is an end unless my wife gets tired of them.

This is an extremely moist and delicious muffin recipe. In fact, one could do away with the glaze and it still tastes yummy! This is a keeper.

I'm looking for a recipe that is lighter (texture) than this one. The taste is great. Reminds me of McDonald's apple bran muffins.
