The delicious flavor of carrot cake baked into a muffin. Orange juice and maple syrup add additional sweetness and flavor.

ingredients

3 cups all-purpose flour
1 cup whole wheat flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2/3 cup plain non-fat yogurt
1/2 cup orange juice
1/2 cup maple syrup
6 egg whites
OR
1 cup non fat egg substitute
1/4 cup canola oil
1 1/2 tablespoon vanilla extract
2 teaspoons dried orange peel
1 pound grated carrots
1 pound shredded Washington apples

directions

In mixing bowl blend flours, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.

In separate bowl blend yogurt, orange juice, maple syrup, egg whites, oil, vanilla, orange peel, carrots, and apples.

Stir apple mixture into dry ingredients just until moistened; do not overmix.

Portion 1/3 cup into paper-lined or non-stick muffin tins.

Bake in preheated 375 degrees F oven for 22 to 25 minutes until tops spring back when lightly touched.

    I was able to make 24 muffins and 3 mini loaves with this recipe. That was filling each muffin to the top with batter. I am freezing extras. I love the taste of these. They remind me of carrot cake. I used a food processor to grate carrots and apples. The apples I used were 2 small fuji and 2 small red delicious.

    I made these yesterday for my daughter's birthday, and I think they are very tasty. She is a picky eater but she seemed to like them too. LOTS of batter! I made 4 mini-bundt cakes for our family celebration, plus about 40 mini-muffins for her to take to preschool. Because the grated apple and carrot pieces were too large for mini-muffins, I decided to puree them with other "wet" ingredients in my food processor. This may have contributed to over-mixing and mine came out a bit chewy, but still good for a healthy treat!
