Let's face it, cake mixes get it right but they can be a bit boring. Doctor up a box of white cake mix with this easy recipe that will make it taste like homemade.

6 ounces white chocolate, coarsely chopped
1 box (18.25 ounce size) plain white cake mix
2/3 cup water
4 ounces softened butter
3 extra large whole eggs
1 large egg white
1 teaspoon clear vanilla extract

directions

Preheat oven to 325 degrees F. Generously grease 2 9-inch cake pans with vegetable shortening then dust with flour and shake out excess.

Melt white chocolate over low heat for approximately 3-4 minutes.

Place cake mix, water, butter, whole eggs, and egg whites in large mixing bowl. Pour in slightly cooled white chocolate and blend with a mixer on low for 2 minutes. Scrape down sides of bowl and mix 2 more minutes.

Divide batter between 2 pans and place on cookie sheet. Bake for about 38 minutes or until golden brown.

    Yum! Very fluffy and tender. It WAS tricky getting it out of the pan because it was so fluffy but worth it. I will use this next time for cupcakes.
