Chicken and Broccoli Lasagna

ingredients
4 tablespoons butter
4 tablespoons flour
2 cups milk
1 cup chicken broth
3 eggs
1/2 cup Parmesan cheese
lasagna noodles
2 tablespoons butter
1 cup chopped onion
1 teaspoon minced garlic
1 1/2 cup diced chicken
1 bag frozen broccoli cuts
1/4 cup parsley
2 cups mozzarella cheese, grated
1/4 cup Parmesan cheese
1/2 teaspoon salt
1 pinch nutmeg
1 pinch ground red pepper
directions
For Sauce: Melt butter, stir in flour. Add milk, whisk until smooth. Stir in broth. Cook, stirring constantly, until thick.
Beat eggs in separate bowl, add small amount of sauce; then combine egg mix with all sauce. Stir in cheese and seasonings.
Cook noodles. Saute chicken in butter with onion and garlic. Stir in broccoli, cook 5 minutes until tender. Add seasonings.
Layer in 9 x 13 pan: sauce, mozzarella, noodles, chicken. Repeat. Finish with cheese. Either freeze or bake at 350 degrees F for 50 minutes, until bubbly.

Family said they wanted a lasagna with a white sauce so I tried this recipe and they all enjoyed it. Only complaint is that they thought it could maybe use a little more chicken and less broccoli.

You need more mozzarella than the recipe calls for (or maybe I just love cheese?). The order that I put everything in the pan was this: noodles, sauce, chicken, mozzarella. Repeat. Bake covered (with foil) for 55 minutes, then uncovered for at least 15. Allow to cool for 45min to an hour before serving. The longer you allow for it to cool, the better it will hold. Be patient!!
