2 boxes (32 oz size) chicken broth
1 bunch celery
1 large yellow onion
1 bunch carrots
2 chicken breasts
1 cup homestyle noodles
salt and pepper, to taste
Peel carrots, and small dice them along with the celery and onion. Mix in a large bowl and season with salt and pepper to taste.
In a large dutch oven, sweat 1/2 of the vegetables for 2-3 minutes over medium-high heat. Add chicken stock and bring to a boil for 5 minutes, add chicken breast and reduce to a simmer for 8-10 minutes to poach chicken.
Pour stock over strainer into the large bowl and remove chicken breasts to cool for at least 10 minutes, and discard veggies.
Place stock back in dutch oven over med-high heat and add the rest of the vegetables and simmer for 20 minutes. Shred chicken, then add noodles and simmer for 10 minutes, adding the chicken at the end to reheat. Season to taste.

First, this feeds WAY more than 6. Maybe 6 very big burly men who haven't eaten in three days or if you really, really, really like soup. Half this recipe would feed 6 normal people. That aside (and the fact that I have chicken soup to last my family of 4 for a week) the soup is really good.

When I'm sick, I just want something simple and wholesome. I keep coming back to this recipe, because it fits the bill. It's also a great base recipe for experimentation. I've added carrots, marjoram, and onion powder with great results.
