Take the Southern staple of cheesy grits and treat it like a mac and cheese casserole. Baking it gives you that beautiful crust on top and the creamy grits underneath while a little creole seasoning spices it up.

4 cups hot, cooked grits
1/2 cup finely chopped onion
1/4 cup finely chopped green onion
1 teaspoon Creole seasoning
1 egg, beaten
2 cups grated cheddar cheese, divided
2 tablespoons chopped fresh parsley
Preheat the oven to 350 degrees F. Grease a baking dish.
Combine the cooked grits with the onion, green onion, creole seasoning, beaten egg, and half of the cheese. Mix well and pour into the baking dish.
Top the grits with the remaining cheese and the chopped parsley.
Place in the oven and bake at 350 degrees F for 30-45 minutes or until the cheese is melted and the casserole is heated through.
Serve hot.

Loved it! It needed a little salt but otherwise it was really good. The seasoning might depend on what Creole seasoning you use. Ours was pretty strong so it didn't need more more than the teaspoon called for.
