Ingredients:
1 can (1 lb, 1 oz size) sweet potatoes
2 large ripe bananas, peeled and quartered
1/4 cup orange juice or unsweetened pineapple juice
1/2 teaspoon salt
1 dash pepper
1/4 cup butter or margarine
1/4 cup light-brown sugar, firmly packed
2 teaspoons grated orange peel
2 tablespoons chopped toasted almonds

Directions:

Preheat oven to 400F.

Arrange potatoes and bananas in an un­ greased 10-by-6 1/2-by-1 1/2 -inch baking dish. Pour orange juice over all; sprinkle with salt and pepper.

In small bowl, mix butter, brown sugar, and orange peel with fork until mixture is crumbly. Sprinkle evenly over potatoes and bananas; sprinkle almonds over top. Bake, uncovered, 20 minutes. Delicious with ham or pork.
