4 sweet potatoes, peeled if desired. 1/4 cup olive oil salt, to taste

Preheat the oven to 400 degrees F. Grease a baking sheet.
Slice the sweet potatoes into 1/2-inch thick strips and place in a bowl. Drizzle the sweet potatoes with the olive oil, tossing to coat them completely.
Spread the sweet potato fries out onto the prepared baking sheet so the fries are in an even layer. Place the baking sheet in the oven and bake for 15-20 minutes or until the fries are browned on the bottom. Turn the fries over carefully and bake for 15-20 more minutes or until golden brown on all sides.
Remove the baking sheet from the oven and sprinkle the fries with salt as desired. You can also add other seasonings. Serve hot.
