Pressure Cooker Beef Bourguignon

Pearl onions, mushrooms, and cubed round steak in a wine-enhanced beef stock thickened with flour. All in under an hour thanks to your Instant Pot pressure cooker.

ingredients

3 slices bacon, diced
12 small pearl onions
OR
1 large onion, chopped
2 pounds round steak, cut into 1-inch pieces
2 tablespoons all-purpose flour
1 cup dry red wine
1/2 cup beef stock
1/2 teaspoon dried thyme
1/4 teaspoon dried basil
2 cloves garlic, minced
2 carrots, peeled and sliced 1/4-inch thick
1/2 pound fresh mushrooms, quartered

directions

Set the pressure cooker to saute mode. Add the bacon and cook, stirring frequently, for 2 minutes or until the fat starts to render from it. Add the onion and cook, stirring frequently, until the onion is soft, about 4 minutes.

Toss the cubed round steak with the flour and add to the pressure cooker. Cook, stirring frequently, until browned on all sides. Stir in the wine, beef stock, thyme, basil, and garlic.

Close the lid and seal. Set the pressure cooker to 20 minutes. When the time is up, use the quick release method to release the steam.

Add the carrots and mushrooms to the pressure cooker and reseal the lid. Set it for 5 minutes. When done, use the quick release method to release the steam.

Serve the beef bourguignon with noodles, if desired.

    Way too watery, little to no flavor; the meat was dry and flavorless. So not ever using this recipe again.

    • Sounds like maybe your pressure cooker cooks at a higher pressure than ours. Reduce the cook time or cook on lower pressure and it should work out better for you.
