1 1/8 cup water
1 1/2 cup bread flour
1 cup rye flour
1 cup whole wheat flour
1 1/2 teaspoon salt
1 1/2 tablespoon oil
1/3 cup molasses
3 tablespoons cocoa powder
1 tablespoon caraway seeds
2 teaspoons yeast
1 teaspoon instant espresso powder, optional

directions

Use Light Crust setting on bread machine. Cool 1 hour before slicing.

You can add espresso powder for flavor. Bread may also be done on dough cycle, then finished in the oven.

    The perfect recipe. I wanted 2 small loves so I used the machine's dough setting, adding 2 Tbsp of water as it was too dry. I then removed it from the machine, punched it down and formed 2 round loaves. I let it rise for 90 minutes, slashed the tops and baked it at 350 for 30 minutes. It came out fantastic.

    My grocery store never has pumpernickel bread and it's one of my favorites. This recipe is quite good. I had to tweak the amount of liquid just a little but that's not unusual for bread machine recipes. I would recommend this recipe if you want to try making your own at home. You do need a good bread machine though because rye and whole wheat flours tend to be harder on cheap machines.
