Want a perfectly easy pumpkin pie? Pumpkin puree blended with sweetened condensed milk and a blend of spices are your ticket to this holiday favorite.
1 can (15 ounce size) pumpkin puree (not pie filling)
1 can (14 ounce size) sweetened condensed milk
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9-inch) unbaked pastry shell
Preheat the oven to 425 degrees F.
Combine the pumpkin, sweetened condensed milk, egg, cinnamon, ginger, nutmeg, and salt in a large mixing bowl. Beat on medium speed with an electric mixer until the ingredients are fully mixed.
Pour the pumpkin filling into the pastry shell. Place in the oven and bake for 15 minutes at 425 degrees F. Reduce the heat to 350 degrees F and bake the pie for 35-45 minutes longer or until set in the middle.
Remove the pie from the oven and let cool on a rack. Serve at room temperature or chill for 1-2 hours before serving.

I ABSOLUTELY LOVE LOVE LOVE THIS RECIPE!!! IT WAS MY FIRST TIME MAKING A PUMPKIN PIE FOR THANKSGIVING THIS YEAR(2010) AND I ABSOLUTELY LOVED IT!!! IT TASTED SOOOOOO GOOOOODDDD!! I love this recipe, we've been making pumpkin pies the last 3 or 4 years, and have always wished for a creamier one. I haven't made it yet but this sounds so wonderful and the half and half of pumpkin and milk sounds like the pumpkin pie will be sweeter too! Thank you this is much easier too!
