ingredients
1/4 cup margarine
1/4 cup all-purpose flour
1 pouch dry onion soup mix
2 cups cold water
2 cups cooked turkey or chicken, cut up
1 package (10 ounce size) frozen mixed vegetables
1 cup shredded Swiss or Cheddar Cheese
1/8 teaspoon black pepper
1 package instant mashed potatoes (herb flavored works well), prepared as directed
directions
Preheat oven to 375 degrees F.
In a large saucepan over medium heat, melt margarine, add flour, stirring constantly for 5 minutes or until golden. Mix soup mix and water thoroughly and add to flour mixture.
Bring to a boil, then simmer 10 minutes or until thickened. Stir in turkey, vegetables, cheese and pepper.
Turn into lightly greased 8 cup (2L) casserole; top with prepared mashed potatoes.
Bake 25-30 minutes or until bubbling.
