Ingredients:
6 ounces bacon -- medium dice
3 cups red bell peppers -- small dice
3 cups onions -- small dice
6 cups corn kernels
1 1/8 gallon corn stock
4 1/2 cups potatoes -- small dice
1 1/2 quart heavy cream
3 cups lobster pieces -- cooked
1/2 cup lemon juice
1/2 teaspoon hot pepper sauce
Salt and pepper -- to taste

Directions:

Par cook potatoes.

In stockpot, cook bacon until brown. Add peppers, onion and corn. Cook 10 minutes. Add cornstock. Bring to a boil; simmer 20 minutes.

Add potatoes and cream. Simmer additional 20 minutes. Add lobster, lemon juice and pepper sauce. Season with salt and pepper.

Note: for lower food cost substitute smoked chicken for the lobster.
